    Talking Turkey (leftovers) Tasty Tuesday

    A crowd fills the house at Thanksgiving each year.  Chairs are mixed and matched to heights of a child’s lap.  Tables are added domino style… fitting this end, turning a corner with several tablecloths draped over them.  My table is a center point of the Thanksgiving action for me.  For me.  Now, for more than half of us it is the Macy’s Day parade which spills into football.   Hors d’oeuvres  fill the gap from the yeasty breakfast rolls or bowls holding fruited steamy oatmeal to dinner.  A steady aroma of turkey feeds an appetite that nothing else can satisfy.  Our menu has turkey highlighting the table at 2 P.M. and…

    What is in your Garden? – Military Family Life Question of the Week

    There is stress relief for me found in getting down and getting my hands dirty. It starts in very early-Spring and extends through the beginning of Fall. I feel capable. I feel healthy. Wielding a shovel makes me even feel *a little* stronger as I work arm and leg muscles. I swear at the weeds and talk baby-talk to the very-capable vegetable plants. (I’m quite certain that’s why they ‘produce’ for us!) Summer time equals a small (yet growing every year) garden for us.     School Lunch

    Can I tell you how much I enjoy making school-lunch for my kindergartner? This is a phenomena to me! I hate cooking. I abhor baking. Lunch around here is usually pretty simple; chicken nuggets & fish sticks, cheese-sandwiches or quesodillas. We don’t deviate very much. So I am just amazed at how much I enjoy pulling out *E*’s lunch-box every night and finding good food to put in it for the next day. So here has been our lunch menu so far:Tuesday: Roast Beef Sandwich (cheese, tomato and onion too), Fruit Snacks, Go-gurt, and iced-tea;Wednesday: Left-over Chicken Fingers from Olive Garden, a packet of ketchup, a couple slices of watermelon,…

    Cucumber and Onion Salad

    Step back in time when you snack on this chilled salad. I remember my Grandmother placing this on the table in a large depression green glass bowl. It was colorful, cool and delicious! Cucumber and Onion Salad 3 cucumbers 6 inches long2 European type 10 inches long1 bunch of green onions Marinade1/2 c white wine vinegar1/2 c sugar1 T dill1 T salt1/2 teaspoon white pepper Slice cumbers very thin.Slice green onions diagonally thinIn small bowl, mix vinegar, sugar, dill, salt and pepper.     It is summer here at the home front… The plants in the garden are loving it and rewarding our mulching, weeding, rotor tilling, and watering with healthy fruit laden branches and vines.Tomatoes?     Keeping to the Theme of Cucumbers… I went digging in the recipe shelves for more earmarked pages. I knew there was another great one to be found. I found a saved newspaper clipping from the Louisville Times years old. Nancy Pappas submitted “Benedictine” and said the recipe originated by Miss Jennie Benedict who ran what was known as a classy place to visit in Louisville – a tea house. She also catered posh parties. Eventually the recipe became so popular it is now available ready-made.
