    Talking Turkey (leftovers) Tasty Tuesday

    November 21, 2011 /

A crowd fills the house at Thanksgiving each year.  Chairs are mixed and matched to heights of a child’s lap.  Tables are added domino style… fitting this end, turning a corner with several tablecloths draped over them.  My table is a center point of the Thanksgiving action for me.  For me.  Now, for more than half of us it is the Macy’s Day parade which spills into football.   Hors d’oeuvres  fill the gap from the yeasty breakfast rolls or bowls holding fruited steamy oatmeal to dinner.  A steady aroma of turkey feeds an appetite that nothing else can satisfy.  Our menu has turkey highlighting the table at 2 P.M. and…

    Herb Pull Apart Yeast Rolls

    October 30, 2011 /

There is nothing like fresh bread out of the oven to complete a meal.  In the past my family has been big fans of frozen store bought rolls, like Pillsbury or Rhodes.  However, I recently discovered how much more delicious made from scratch rolls can be.  A perfect compliment to soups, steak, or chicken.  This side-dish complements the senses. This easy recipe recipe makes 18 rolls, which would be perfect for a Thanksgiving get together but if you are making just for a family dinner you can freeze what you don’t plan on eating for another night.  It’s a great way to save a little money and have homemade deliciousness on hand!…

    Tasty Tuesday: Great Snack Bits

    April 13, 2010 /

After a great late lunch in a touristy type town in Florida, evening had a way of showing up. Dinner promised to be as good as the long walk, the shops and laughter. This was not going to be a heavy sit down affair, as we were ready to nibble. Mary and Ed had it all planned. We picked out a movie to watch, Mary served up a chilled bowl of gazpacho and then filled up snazzy serving bowls of Great Snack Bits. Perfect food, wonderful fun and memories that I will hold dear. Isn’t that the way it is when you visit good USAF folk! The snack mix is…

Tasty Tuesday: Carrot Cups – A Biscuit w/ Carrots! Simple as ABC

    March 30, 2010 /

I have a calendar that Pillsbury sent to me. It features a recipe a month. A few months ago, there was an idea of taking Grands or any large baking soda biscuit, flattening it and baking a mini-fruit pie in a muffin cup. (Oh my, they were good!)We are not always ‘allowed’, ‘encouraged’ or looking to have sugary desserts. Diabetes frowns upon that part of meal! Careful preparation of the menu does allow for it from time to time. However, this simple dish just invited me to play. Enter springtime. We love vegetables and their colorful display. When I added Boursin and a sharp New York cheddar to carrots, we…

Our Pepper Plants are A’Popping: Ready for Nacho Topping

    September 14, 2009 /

No luck this year with green beans… at least not since early July when we got our first harvest. Then the bugs, or elements or something came in and wiped them out. Ugh. Little luck with tomatoes. We have walnut trees, so I know the tomatoes have to fight for survival. Other rows of plants have flourished… and I love it. Ball jars or Mason jars will never go out of business as long as I am in control of the pressure cooker. That big old pot goes nonstop during this time of the year. But what to do with peppers. Can’t can them; chopping and freezing work well.. but…

Cucumbers Hold the Cool of Summer

    July 28, 2008 /

It is summer here at the home front… The plants in the garden are loving it and rewarding our mulching, weeding, rotor tilling, and watering with healthy fruit laden branches and vines.Tomatoes? I can’t get enough of them. Lettuce? Daily basis of sumptuous salads. But Cucumbers? A few of them are great, a few more are okay, and then…. even the neighbors lock the doors when they see you coming with a bag full! However, before you get to the overload stage. Sit down with a large glass of iced water and snack on this Dill Dip for vegetables. 1 cup sour cream1/2 cup mayonnaise1 Tablespoon finely chopped green onion2 teaspoons…

    Icelandic Potatoes

    January 10, 2008 /

Because I posted an ‘oh so different’ recipe a while ago, I thought I needed to show that some sanity does simmer and brew in Icelandic kitchens. Butter-Steamed New Potatoes. I would write the Icelandic title… but don’t have the ability to use their extended alphabet. This recipe is for 4 servings. Keep that in mind…30 small new potatoes. They are small in deed! There isn’t much dirt at all in Iceland – it is volcanic, so these tiny spuds have to give it their all to scrape through a living in the ground. Scrub the potatoes – but not too hard. They’ll fly out of your hands. Pat dry.…
