    Camp Grandpa! It is July on our calendar and fireworks are getting to explode in my heart as the grands are getting ready to arrive. Activities are on Grandpa’s plate.     Tasty Tuesday: Healthy & Yummy Chicken Nuggets

    There is something about chicken nuggets that make my children’s mouth water, whether the frozen variety cooked in the toaster oven or the kind fresh out of the deep-fat fryer at our favorite fast food restaurant. Are they on the list of healthy-meals at the Kocsis household though?     We went to the pumpkin patch with 2 of the grands today.  Fun.  Each ran and found their beauty.  They surprised me in that they didn’t go for the big one… but each chose their favorite from the ones at the farthest end of the garden… as if the pursuit was the prize!With a little muscle help from Grandpa, the vine came loose, and the chilly orange orb was theirs!     I was never sure about horseradish. It is oh so strong. I like hot peppers, but there really is nothing similar other than a strong taste. I love zippy salad dressings… again the strong taste.     Dinner was not progressing as it should have last night. My mind was going 7 places at once and the hunger bar was rising higher than the oven was baking. Times like this call for desperate action: Search and destroy leftovers in the fridge… and get them out into a decorative bowl to make them looks PLANNED and more importantly appetizing.     The gardens are chugging out produce. I can see it like a cartoon event. Boing another plant flops out a beauty. Boing there’s another variety. Being one step ahead of the produce production line AND using these trophies keeps the kitchen active. Eggplant. Not high on my experience level.     Fresh Spinach Dip

    I mentioned the other day that I had a boat load of spinach that we harvested… all at once. Besides frying it, putting it in salads and the yummy Spinach Squares I found a wonderful dip. We sat outside on the deck, in the evening and celebrated the produce with a bowl of bagel chips and Fresh Spinach Dip. I highly recommend it!I love to put the spinach in the freezer for about an hour, then take it out and crunch it down. Amazing how it breaks and is so brittle.     This is an all time favorite. It was the dish that I was asked to bring to so many occasions that it almost became known as Deb’s Dip! This cooks up in no time and has little preparations needs. You have to love that!
