Menu Monday: Pigs- and Cows-in-a-blanket
Ah Summer! We no longer pack lunches for school in the morning but fly-by-the-seat-of-our-pants at lunch time. Frozen pizzas cooked in the toaster oven, PB-and-J, cheese sandwiches… all favorites around here! But this weekend when I was grocery shopping I picked up a few packs of refrigerated croissant rolls. YUM! So much diversity in one little package of raw dough. A fun and perfect summery lunch in my kids’ eyes is what we have dubbed ‘Pigs-in-a-Blanket’ and ‘Cows-in-a-Blanket’. Love and Marriage
I am 100% in love. Hubs and I aren’t your ‘perfect’ couple. I get frustrated with him when he leaves the Sunday paper strewn across the kitchen counter. He would really prefer I DIDN’T leave my shoes all over the house. I’m sure any psychologist could pick our relationship apart. We have squabbles. YET, We don’t kick. We don’t scream. Summer Jobs
Summer has arrived at the Kocsis Household. It may not be summer on the calendar but school is out! The kids are sleeping in (well the teenager is anyway), staying up late & enjoying every moment in between. I remember these days as a child. The monotony of school was broken with the excitement of summer. I have clear memories of swimming at the base pool, having to pass the test to dive off of the diving board; taking our bikes to the shoppette to buy candy; playing on our slip and slide in the backyard; or jumping off the deck (as a teenager) to land in a little kids…

What a weekend! I am thrilled to have Hubs home from his year long deployment to the sand-box for so many reasons. This weekend was a quick reminder of one of those reasons: multiple-schedules. There were times over this last year where I simply had to say “I can’t do it” because it would have required splitting my body into two and being at four places at once. It was frustrating because when my children are active they are happy. When they are happy I am happy. But there were times we just couldn’t do it all PERIOD. Glazed Brussels Sprouts with Bacon and Bread Crumbs
We have had our first frost, first freeze and therefore our gathering of the Brussels Sprouts. These little ‘cabbage heads’ grow on a tall spike, spiraling around the spear from top to bottom. They are not the easiest vegetables to harvest, as they have to be cut off of the stalk, plopped in a bucket and lugged inside… and did I mention that it is near freezing! Ah, but that is just an added touch to these beauties. There are 9 full quart zip-lock bags in our freezer just waiting to be served in style. Spilt Black Berries
We have a wonderful wild blackberry patch in the “back 40” of our land and they are at the height of their season! We have had a couple of nice rainshowers recently and they are black and fat and I love them in the winter on my cereal and in my muffins. Right now we put them in salads and other wonderful summer dishes. I grew up on a “Berry Farm” and we often call ourselves a Berry Pickin Family. The Jail Bird Puppy
Vacuuming the carpet is not my favorite past time. Remembering the color of the recliner was never an issue. Enter our new puppy: Grinda, a sweet cuddly Corgi. (Disclaimer – our dogs are always puppies as long as they chew on ropes, jump at a squirrel, and bark at the TV.) I am a large dog lover – oh how I loved our afghan hound! Why I take walks for the New Year
Its a New Year! 2008! Wow! Exciting but so much to do; even overwhelming at times. Is this the year for the next assignment (PCS); return or departure of a loved one; arrival of a new family member; car running out of miles and a new one on the horizon; etc., etc., ?
