Summer’s End Tomato Pie
Our tomato plants are looking tired. VERY tired, but they are using all their gusto and are still pushing fruit out. These tomatoes are not the big round beauties of early August, but there they are, and I love them! We have worked these beauties: canned, frozen, eaten tomato salad and stuffed tomatoes. Now I am thinking something warm. Roasted Tomato Pie2 lbs tomatoes2 T olive oil2 T crushed garlicsalt and pepper1 (9″) pie crust1 1/4 cup sharp cheddar cheese1/4 cup fresh basil (1 t. dried)1 t fresh oregano (1/4 t dried)3/4 c Parmesan cheese, grated3/4 c mayonnaise Preparation Heat oven to 325 degrees. School Lunch
Can I tell you how much I enjoy making school-lunch for my kindergartner? This is a phenomena to me! I hate cooking. I abhor baking. Lunch around here is usually pretty simple; chicken nuggets & fish sticks, cheese-sandwiches or quesodillas. We don’t deviate very much. So I am just amazed at how much I enjoy pulling out *E*’s lunch-box every night and finding good food to put in it for the next day. So here has been our lunch menu so far:Tuesday: Roast Beef Sandwich (cheese, tomato and onion too), Fruit Snacks, Go-gurt, and iced-tea;Wednesday: Left-over Chicken Fingers from Olive Garden, a packet of ketchup, a couple slices of watermelon,…

Cucumbers Hold the Cool of Summer
It is summer here at the home front… The plants in the garden are loving it and rewarding our mulching, weeding, rotor tilling, and watering with healthy fruit laden branches and vines.Tomatoes? I can’t get enough of them. Lettuce? Daily basis of sumptuous salads. But Cucumbers? A few of them are great, a few more are okay, and then…. even the neighbors lock the doors when they see you coming with a bag full! However, before you get to the overload stage. Sit down with a large glass of iced water and snack on this Dill Dip for vegetables. 1 cup sour cream1/2 cup mayonnaise1 Tablespoon finely chopped green onion2 teaspoons…

The Rising Costs of Food for a Military Family (or where do I plant my garden?)
One of the best military benefits we discovered after joining the Air Force way back when was the commissary! The food costs were truly a savings and became even more of a benefit as our family grew in numbers. We truly miss having one close by in our current location. You should see the looks on the faces of the commissary staff at Selfridge Air National Guard Base when we pull our four (4) heaping to the top carts (that is the amount we can get into one 1999 Cherokee) to the checkout counter during our quarterly visit. With the current energy prices going up, the larger impact on some…

A Minute out of the Norm: Plant Some Seeds
It is still pretty cold here in the Midwest, the danger of frost certainly has not passed. In fact, I wouldn’t be totally surprised if we got more snow (aghast) between now and the end of the month. However, my boys and I have started our summer garden. Before I dive into the topic of our garden I have to share a ‘funny’ story about miscommunication. My husband was going birthday shopping with the boys last Saturday for me. I asked him while he was out to please pick out some seeds for our annual vegetable-garden. He won’t be around this year for our vegetable & herb garden so I…
