‘Muffins for Mom’ and the Super-Teacher
This morning I had the distinct pleasure of joining my 1st grader in his class room for ‘Muffins for Mom’. A Mother’s Day celebration with his classmates. What an honor! We walked down the hall hand in hand before the school day started. We enjoyed muffins and juice (my juice of choice was coffee), artwork and tic tac toe, smiles and hugs. A mother could not ask for a better way to start the day! Let me tell you about Mrs G, C’s first grade teacher, a beautiful example of a teacher there to help her students shine. Before the first grade year started an acquaintance and I were at the park talking. …

Tasty Tuesday with Sweet Potato Muffins
We went to the pumpkin patch with 2 of the grands today. Fun. Each ran and found their beauty. They surprised me in that they didn’t go for the big one… but each chose their favorite from the ones at the farthest end of the garden… as if the pursuit was the prize! With a little muscle help from Grandpa, the vine came loose, and the chilly orange orb was theirs! Since it is Tuesday, they wanted to perform in the kitchen, and pumpkin was on their minds. Muffins seemed the perfect treat for this chilly afternoon. We got out the ingredients, put on the aprons and set to work. One…

Child’s Play! Sprinkle Muffins
Tuesdays are one of my very favorite days. Esther and Jacob come to play with me. Drawers are opened, cabinets cleaned out, car ‘noise’ buzzes down the halls, Sesame Street is back on the TV after a 20+ year absence. All of those activities are out of my realm of influence. But let’s get to the kitchen! Let’s see what is cooking today!I asked Jacob… last week for Valentines’ Day we made a Rice Krispie heart. It was amazing. Almost as many sprinkles as marshmallows. But that was the beauty! It was a total Jacob creation.Today it will be muffins. I was thinking, apple or peach, or berry. NO… Sprinkle…

Pumpkin Muffins
I love the Thanksgiving Season! The sights, the smells, the colors, the sounds. Through the years I am finding the joys in baking and cooking. I spent some time earlier last week making Pumpkin Rolls with my mother-in-law; I am working with my mom so that I can help with the Thanksgiving meal; and today I made the most DELICIOUS muffins I have ever had in my life. (I had to taste test them after they came out of the oven after all!) This afternoon I had ‘Pumpkin Muffins’ on my list to bake. I called out to my brood, “Who wants to help me bake?!” *E*, 8 years old,…

Sweet Potato Nut Muffins or Bread
Sweet potatoes are in the markets now. They are the fall colors coming to your table, ready to eat and full of vitamins. We have company and I somehow feel obligated to make enough food for local Michigan, Illinois and Indiana… needless to say, I have leftovers often. AND I love to be a touch creative in the use of this bounty… and pass it on to others in a more palpable form than cold potatoes in a bowl.Smell the muffins! Pass the bread! This recipe comes from memories of church suppers, when the ladies brought in the best of their mixings and musings. Everything was served with pride and…

A Warm Kiss of Sweetness: Muffins
Summer is really getting to be a memory. Our leaves are still green, however yellows and reds are tipping some of the oaks and maples. I love this time of year, as the mosquitoes are just about gone. YEAH! AMEN and Hallelujah! Dale has picked the blackberry patch clean. He committed himself not to leave any there for the deer, raccoons or any other marauder. Our freezer is full and our oven is popping out warm kisses of sweetness. This muffin recipe can be revised to use any fruit. The trick, I think, is not to over mix the batter. Be ready to put UNSMOOTH (Is that a word?… Spell…

Peach Oatmeal Muffins
We are getting ready to go on a road trip. Dale likes to leave at 0 Dark Hundred. Earlier if he could… sigh. Driving out of our area we’ll see lots of deer (aghhh must be alert!), stars and a few farmers in the fields, but not a lot of McD’s, BK’s or anywhere that even the smell of coffee is available. So, for the first hour I pack 2 muffins and 2 travel mug of java. Have to have all the help I can to keep the eye lids UP! Last year, our farmer’s market had multiple peach booths. I bought multiple pecks of peaches. None went to waste.…

Once in a blue moon …
I think my kids had to pick themselves up off the floor last night … I baked. It happens, oh once in a blue moon, and almost all my baking involves a box. Cake from a box, muffins from a box… add the egg and the oil and wa-la you are done. Last night actually involved a recipe 🙂 We had fun. The boys each took turns adding the ingredients to the mixing bowl. They took turns whisking, there was not one fight involved. It was beautiful! (My only complaint was the clean-up … but you can’t win them all.) I did have to do a little research in order to…

Spilt Black Berries
We have a wonderful wild blackberry patch in the “back 40” of our land and they are at the height of their season! We have had a couple of nice rainshowers recently and they are black and fat and I love them in the winter on my cereal and in my muffins. Right now we put them in salads and other wonderful summer dishes. I grew up on a “Berry Farm” and we often call ourselves a Berry Pickin Family. But I get ahead of myself since before they can proceed into my bowl of many types I have to pick them. Now these are wild berries; not in neat…
