I have a calendar that Pillsbury sent to me. It features a recipe a month. A few months ago, there was an idea of taking Grands or any large baking soda biscuit, flattening it and baking a mini-fruit pie in a muffin cup. (Oh my, they were good!)We are not always ‘allowed’, ‘encouraged’ or looking to have sugary desserts. Diabetes frowns upon that part of meal! Coping with stress
The other day my 1st grader got off the bus, dragged himself into the house, snagged a snack and sat down for homework. All routine. Except for the awful look of frustration on his face. After inquiring what was wrong I was informed that the bus-driver was a sub that afternoon and she was MEAN. Grumble, Grumble, back to homework. Couple minutes later I look back and there were tears streaming down his face. More questions and he is still very-focused on that mean bus-driver, clearly homework was not in the forefront of his mind. Dinner was not progressing as it should have last night. My mind was going 7 places at once and the hunger bar was rising higher than the oven was baking. Every night at about 7:30pm we start the bed-time routine… Baths; Snacks, healthy dinners equal yummy snack; didn’t eat very well? then you get a healthy snack; Teeth brushed; Books, one book for each boy; and then finally… Bed… kisses, water-refills, lights-out, “I love you”s.And then I crawl into my happy place. What is in your Garden? – Military Family Life Question of the Week
There is stress relief for me found in getting down and getting my hands dirty. It starts in very early-Spring and extends through the beginning of Fall. I feel capable. I feel healthy. Wielding a shovel makes me even feel *a little* stronger as I work arm and leg muscles. I swear at the weeds and talk baby-talk to the very-capable vegetable plants. It is funny how I regard time. It is in sections. Sections of a lifetime: childhood, teenager, college student, newly wed, etc. Then there is the where we lived time: first year of marriage (3 installations), then Nevada (ISAFAF), Panama (Howard AFB) and so on. I do love thinking about Springtime. I love seeing plants work their way out of ground that was just snow covered and hard as rock. Now, the plot looks earthy, moist and flower ready. With a selection of flowers to cut to bring into the house brings to mind the garden that will soon be alive with seedlings: our vegetable garden. It grows each year. I’m feeling *very* fortunate. I have my boys tucked into bed and my feet are up for the evening. *E*, 6 years old is already snoring softly in dream world. *C*, 3 years old, is turning his little-lamp by his bed on and off, on and off, on and off. Step back in time when you snack on this chilled salad. I remember my Grandmother placing this on the table in a large depression green glass bowl. It was colorful, cool and delicious! Cucumber and Onion Salad 3 cucumbers 6 inches long2 European type 10 inches long1 bunch of green onions Marinade1/2 c white wine vinegar1/2 c sugar1 T dill1 T salt1/2 teaspoon white pepper Slice cumbers very thin.Slice green onions diagonally thinIn small bowl, mix vinegar, sugar, dill, salt and pepper.
