Oatmeal Walnut Waffles
Sunday Night Supper… in our house needs to be a simple satisfying meal. Now sometimes this meal occurs in the afternoon, but often it’s an evening feel good, relaxed yummy time. Oatmeal Walnut Waffles. As Sesame Street would say… without *W* waffles would be awful. See, it is a childlike time. Syrup, honey, jam or just hard butter top these aroma beauties and allow the weekend to come to closure. Oatmeal Walnut Waffles 3 eggs separated 1 1/2 c milk 1/4 c oil or melted shortening 1/2 c oatmeal 1 3/4 c all purpose flour 2 1/2 t baking powder 1 t salt cinnamon In a medium bowl beat egg…

My Definition of Perfection
Here in northeastern Ohio we have a wonderful park-system called the ‘Metroparks’. They are small parks scattered throughout the area, run by the local counties. My favorite park is just 10 minutes north of us and makes for some wonderful walks at all times of the year. The Autumn season is glorious with the changing of the leaves; vibrant reds, golds, yellows and oranges, my favorite colors! We took the opportunity this weekend after church to head up as a family to get a picture. We got three or four good ones but I have to admit this is my favorite: At first I thought, “Wow, what a picture-perfect shot…”, a family of six,…

Tasty Tuesday Banana Pepper Gratin
Summer is so over… so very over. Temperature dipped to the twenties; leaves are brilliant red, orange with faded yellow edges; sunshine hours have slipped to dark morning and evenings. Autumn is here.. no doubt. The gleaner in me came out this weekend when I heard of the temperature forecast. Dale and I picked anything living out there that could be touched by a freeze. Whoa, I already have packed a peck of pickled peppers into the pressure cooker. My imagination has been running overtime as to how to use plant after plant that over produced this year. Yeah for that… but I can’t let them die on the plant.…

Distractions
Distractions are a good thing. Distractions kept me sane during hub’s deployment in Iraq. My boys had swim lessons, soccer camp; we had time with family and friends during deployment. All things that kept my mind from focusing on the one person I was missing the most, my soldier! We were busy, we were distracted, life was only as good as we made it. Distracting ourselves at the local park’s Butterfly HabitatDistractions are keeping me sane during these last few days of pregnancy. I had contractions ALL weekend but they weren’t getting any stronger or any closer. If I sat down all I noticed was the contractions. All I could…

USAA Auto Circle Blogger Event
USAA Auto Circle Blogger Event This weekend I have been invited to USAA’s headquarters in San Antonio, Texas. I will be attending along with other bloggers in order to learn more about USAA and it’s many programs developed to assist military families with key purchases. This summer, USAA will launch a simplified online and mobile experience for finding, financing and insuring consumer autos and homes, making the entire experience easier and less aggravating. As I go into the presentations and meetings I ask that you, our reader, please pass on any questions you may have for me to consider asking USAA. I would enjoy the opportunity to share any questions you…

Menu Monday: Pigs- and Cows-in-a-blanket
Ah Summer! We no longer pack lunches for school in the morning but fly-by-the-seat-of-our-pants at lunch time. Frozen pizzas cooked in the toaster oven, PB-and-J, cheese sandwiches… all favorites around here! But this weekend when I was grocery shopping I picked up a few packs of refrigerated croissant rolls. YUM! So much diversity in one little package of raw dough. A fun and perfect summery lunch in my kids’ eyes is what we have dubbed ‘Pigs-in-a-Blanket’ and ‘Cows-in-a-Blanket’. The “pigs” are half a cold hot dog rolled in one raw-croissant roll. The “cows” are half a cheese stick rolled in a raw-croissant roll. After you have them rolled up stick…

Down and Dreary … What is your message?
It is a rainy, cold, dark day here in northeast Ohio. I was just scanning my friends’ feed on Facebook and couldn’t help but chuckle a little bit about how irritated most people were this morning. People are just feeling a little down… lacking motivation… ready to throw in the towel… at 10am! Isn’t it a little humorous what the weather does to our mood?! (I know it sure affects mine.) The other thought I had was, most of these friends doing all this grumbling are usually pretty positive. Do you surround yourself with positive people?! I think it is very important to (a) be positive and (b) surround yourself…

Spring Break Fun
I love the change in routine involved with Spring Break! We have enjoyed alarm clocks off, time outdoors, moments together and later bedtimes. Time with school-aged friends, time with neighbors, time with cousins, grandparents, aunts and uncles. I had a great Easter weekend at home. We enjoyed Easter church-service as a family, followed by the annual Easter-Egg hunt at Hub’s Grandma’s house involving A LOT of plastic eggs and A LOT of kids. We spent a few days enjoying the warmer-then-usual Spring weather in our backyard, planting some flower seeds, friends over to play backyard-baseball and so much more! We packed up the car mid-week and headed to my folk’s house, about a five hour drive, but well worth the time!…

Fridays are just Fine for Fish
Spicy and zippy dishes welcome the weekend! I am still thinking about having fish tonight and going through some of my multiple starred recipes. This Creole Fillet recipe came from a 56th ARS Squadron collection of recipes. We were in Iceland where Ysa, or cod was fresh and abundant.
