Summer is really getting to be a memory. Our leaves are still green, however yellows and reds are tipping some of the oaks and maples. I love this time of year, as the mosquitoes are just about gone. Mid Morning Healthy Fruit Snack
It is funny how I regard time. It is in sections. Sections of a lifetime: childhood, teenager, college student, newly wed, etc. Then there is the where we lived time: first year of marriage (3 installations), then Nevada (ISAFAF), Panama (Howard AFB) and so on. Smaller segments and daily time measurements can revolve around something good to eat! I do love a good snack. Warning: for the squeemish I do have a pretty graphic picture below, involving a bit of blood. All in the ‘day in the life’ of a boy… but not exactly a pretty picture. Hubby can not get home a day too soon! My six year-old missed school on Thursday and Friday due to a pretty rotten cold and temperature ranging from 99 to 103 throughout the day & night. School Lunch
Can I tell you how much I enjoy making school-lunch for my kindergartner? This is a phenomena to me! I hate cooking. I abhor baking. Lunch around here is usually pretty simple; chicken nuggets & fish sticks, cheese-sandwiches or quesodillas. We don’t deviate very much. So I am just amazed at how much I enjoy pulling out *E*’s lunch-box every night and finding good food to put in it for the next day. Strawberry Rhubarb and whipped cream jelly roll. Oh my… this is so good.4 large eggs, separated1 1/2 cup granulated sugar1 cup flourpinch of salt Filling1/2 pound rhubarb stalks, about 2 cups trimmed and chopped2 cups fresh strawberries, hulled washed and sliced1/2 c granulated sugar1 large tub of Cool Whip: divided1 strawberry yogurt Preparation: Heat oven to 375 degrees.
