
Broiled Fish with Mornay Cheesy Topping
This is it. The ultimate fish dish of the household. We love fish. We love cheese… so the marriage is perfect. Parmesan cheese has an excellent bite to it, and when the meal is accompanied with a small serving of linguine al fredo and steamed broccoli. Life is just good!
And as an extra plus, this dish is so simple, quick to make and wonderful to sit and sip a glass of wine and recap the day. Welcome to the weekend!
Fish with Broiled Mornay Topping
1 1/2 lbs halibut, sole or cod
olive oil
1/2 c mayonnaise
1/2 c sour cream
1/2 c Parmesan cheese
1/4 t Franks hot sauce
1 T minced onion
1/4 t paprika
Use the broiler tray from your oven, spray with Pam or spray oil. Preheat broiler according to oven recommendation.
Mix mayonnaise, sour cream, Parmesan hot sauce and onion together in a bowl. Set aside.
Place fish on well oiled broiler pan surface. If fish still has skin on it… brush with oil and put skin side up on the broiler.
Broil for 4 to 5 minutes. Remove from oven and see if skin pulls off, do so. Regardless, flip over fillets so other side is up, test with a fork to see if it is starting to be flaky.
Divide the moray sauce evenly over the fish fillets. Sprinkle with paprika
Return to broiler and broil 4 to 5 minutes longer until golden brown and fish flakes easily.
