These fish recipes are just swimming around my head today! I have posted quite a few. But, one is just better than the next… until I go back and think… that is the one I want. They just swim past each other!
I love the look of a good dish! This Pasta and Fish dish uses shells as the starch, and is so good!
1 1lb box of shell pasta
1/2 c chipped onion
1/2 t dried basil
2 T olive oil
1 envelope of spaghetti sauce mix
32 oz canned tomatoes
1 lb fish fillets, solid white fish, cut into cubes
1/2 c Parmesan cheese
8 oz mozzarella cheese
Cook shells according to box directions until just al dente. Drain. Reserve 2 T pasta water
Saute coins with basil in oil in large saucepan; stir in sauce mix and tomatoes. Cover and simmer for 10 minutes. Add Fish cubes and simmer 10 minutes longer
Spoon 1/2 shells into a large casserole dish, add pasta water. Sprinkle with 1/2 Parmesan cheese; top with the fish tomato sauce. Repeat layers; arrange mozzarella cheese on top.
Bake in moderate oven: 375 degrees for 30 minutes.byDeborahonFriday, January 08, 2010Email ThisBlogThis!Share to TwitterShare to FacebookShare to PinterestMilitary Life:Deborah, fish,Recipe
