
Child’s Play! Sprinkle Muffins
Tuesdays are one of my very favorite days. Esther and Jacob come to play with me. Drawers are opened, cabinets cleaned out, car ‘noise’ buzzes down the halls, Sesame Street is back on the TV after a 20+ year absence. All of those activities are out of my realm of influence. But let’s get to the kitchen! Let’s see what is cooking today!
I asked Jacob… last week for Valentines’ Day we made a Rice Krispie heart. It was amazing. Almost as many sprinkles as marshmallows. But that was the beauty! It was a total Jacob creation.
Today it will be muffins. I was thinking, apple or peach, or berry. NO… Sprinkle muffins the chef said. So, chocolate sprinkle muffins are our new favorite!
Chocolate Sprinkle Muffinspreheat oven to 400 degrees (not child’s play)1 1/2 cups all purpose flour1/2 c sugar2 t baking powder1/4 t salt1/2 c milk (or 1/4 c milk and 1/3 c. yogurt)1 egg1/4 c vegetable oilIn a large bowl mix dry ingredients with a fork to blend sugar, baking powder with the flour. In a glass measuring cup, mix milk (milk and yogurt), egg and oil. Mix and combine these. Pour into the dry ingredients and mix JUST UNTIL MOST is incorporated… will be lumpy.With a large spoon, divide into muffin tin that has been sprayed with oil, or greased.Pick up a few good pinches of sprinkles and place on top of muffins.Bake 20 minutes and remove muffins immediately to a cooling rack. Serve with a smile! Jacob did!
