    October 17, 2013 /

Are you looking for something new to put in your next care package?  How about a slice of home?  A reminder of autumn? The taste of crispy apples.  But how do you get it overseas without it turning bad, mushy, yucky?  Enter the power of the dehydrator! To make these yourself you will need: Apples – 4 or 5 per batch An Apple Peeler / Corer  (Here is an example over at Amazon) A Food Dehydrator (An example at Amazon) Wash and core your apples, but leave the peals on for some yummy added fiber.  If you use a corer similar to mine you can simply push the peeler-arm back and it won’t…

    Going Banana Bread

    January 30, 2013 /

Recipe ready, ingredients and apronsTuesdays with the Grands: Going Banana Bread Tuesday morning started with a whirlwind of life… Stand back because the babes are about to enter! The choice was made to change the day from a day of pure babysitting into a time to cherish, capture with pictures, perhaps decorate the furniture create a memory. For all the world, he looks like he is waving to his adoring fans,or saluting the troops.  Either way, he owns the joint! Tuesday was rainy, not the misty sweet shower after the snow storms… but blustery, tree limb cracking flood stage rain. So a ride on the tractor, or a walk in the woods was…

    Apple-Oatmeal Yeast Bread

    November 19, 2012 /

Thanksgiving is zooming at us with rocket speed.  Today might be Monday… but watch out!  Thursday is coming into focus.  Slow down and make some yeast bread.  This recipe calls for apple cider which is prominent in the aroma.  Welcome Thanksgiving week with a fresh loaf of bread.  I think we all need something ‘to hold us up’ for the hard work of eatting a fantastic meal later!   Oh yes, bring it on.  Simple to make and bake, and totally wonderful to relax and taste the wholesome goodness of oats and apples. Tasty Tuesday: Homemade Gnocchi

    August 7, 2012 /

I have a few loves in life.  One of them is good gnocchi.  It is one of my favorite pastas and I never pass up the opportunity to try a new dish of it, usually at a restaurant.  Recently I stepped out of my comfort zone and tried successfully to make it myself.  I can’t find a gnocchi that I just /love/ from a grocery store and now I no longer need to look. Wow is this easy!  I believe that traditional gnocchi is made from potatoes and this is made with cheese, maybe that’s why I fell in love with this recipe.  Another note, my husband /hates/ Ricotta Cheese so I…

    Layered Broccoli Salad

    July 3, 2012 /

There is something so refreshing and delicious about food that is in season.  My peas are bursting off the vines, there is proliferent amounts of broccoli in gardens around the midwest and isn’t bacon always in season?  I’m thinking, “Yes!”  Broccoli Salad is a must have this time of year. Before we get started I have to share my new favorite thing to wear … skirts!  I had /no idea/ they could be so comfortable and cool (literally) until recently.  Admitedly I can’t just dive into garden work when I’ve donned my favorite comfortable knit skirt but I sure can enjoy a bottle glass of wine (or my favorite broccoli salad!) with…

Tasty Tuesday: Healthy & Yummy Chicken Nuggets

    June 5, 2012 /

There is something about chicken nuggets that make my children’s mouth water, whether the frozen variety cooked in the toaster oven or the kind fresh out of the deep-fat fryer at our favorite fast food restaurant. Are they on the list of healthy-meals at the Kocsis household though? Not so much. However, earlier this week I made a delicious breaded and baked chicken nugget that knocked my boys’ socks right off!  I know it is a good meal when there are no leftovers, when they ask for more and I have to say “Sorry, they are all gone.”, when I think ‘We are definitely doing these again’! Perfectly Sweet Healthy Birthday Snack

    April 16, 2012 /

A very Happy Birthday to my middle-son today!  7 years old and I feel like he should be turning 3 or 4.  How does time pass so quickly? Every child loves to bring in a sweet treat to school to celebrate their special day.  Before Spring Break I sent in a note to his teacher asking if I could send in cupcakes, a sweet-tooth favorite for the birthday boy.  The note that came home was a bit disappointing.  “We would love a birthday treat, but please send in something healthy.”  Humph…  My thought, ‘Come on! It is a Birthday!’  But I polled Facebook friends for a healthy, yummy treat that would satisfy…
