The Taste of Home. There is a magazine with that name, there is also a mindspot that is so real it opens floods of memories. A taste of home brings our matriarchs, patriarchs and local chefs right there to the senses, all of those senses can be activated… just by the thoughts of tastes that are not at our fingertips. Palisades Park Eggplant Lasagna
The gardens are chugging out produce. I can see it like a cartoon event. Boing another plant flops out a beauty. Boing there’s another variety. Being one step ahead of the produce production line AND using these trophies keeps the kitchen active. Eggplant. Not high on my experience level. In the mood for some Mexican Food?
I was in our local grocery store last week and eyed the tomatoes, corn and other fresh items that were on sale. Soon it will be our local products sitting in the bins. (Small store, with lots of local flavor!) I don’t know, but the picture I took in of the vegetables just put me in the mood for some good Mexican food. It is cold outside. Wait, it is JUNE! Today the temperature is 57 degrees at 1 pm. A few weeks ago, I would have loved this warmth. Now, I’ve been spoiled by warm dry air. Scallop and Cheese Bake
Another Lenten Friday special meal here. This creamy dish, served with a salad and fresh french bread is a winner. The Gruyere cheese is nutty and adds a new flavor. If you don’t have Gruyere, Swiss cheese is a good substitute. 1 lb scallops1 T chopped onion4 mushrooms, slicked thin3 T butter3 T. flour1/8 t cayenne pepper1/2 c milk2 T grated Parmesan cheese1 T snipped parsley1/2 c shredded Gruyere cheese1/2 c finely crushed round crackers1 T butter, melted Thaw scallops if frozen. Cut any large scallops in half. In saucepan boil scallops with just enough water to cover them. Start with cold water. Reduce heat and simmer 1 minute. Drain,…

The season of Lent is the harbinger of Spring… I guess some folks have the robin. I love the smells of hot cross buns in the bakery.
