Tasty Tuesday: Rhubarb / Strawberry Crunch Reduced Sugar
It is getting to be close to Farmer’s Market time, a.k.a. rhubarb time. I am really believe that the snows are behind us. My proof of this is 1 May when the markets open. One can find asparagus and rhubarb. This is living. Both have long stalks that stick up out of the ground that announce “Hey! I made it! Your turn!” So, taking my turn with the rhubarb, I like to pair it with strawberries – totally sweet and sour. And I like my rhubarb to taste a tad sour… not overly sugared. Rhubarb / Strawberry Crunch welcomes the taste buds to do a spring dance right there in…

Tasty Tuesday: Carrot Cups – A Biscuit w/ Carrots! Simple as ABC
I have a calendar that Pillsbury sent to me. It features a recipe a month. A few months ago, there was an idea of taking Grands or any large baking soda biscuit, flattening it and baking a mini-fruit pie in a muffin cup. (Oh my, they were good!)We are not always ‘allowed’, ‘encouraged’ or looking to have sugary desserts. Diabetes frowns upon that part of meal! Careful preparation of the menu does allow for it from time to time. However, this simple dish just invited me to play. Enter springtime. We love vegetables and their colorful display. When I added Boursin and a sharp New York cheddar to carrots, we…

Mid Morning Healthy Fruit Snack
It is funny how I regard time. It is in sections. Sections of a lifetime: childhood, teenager, college student, newly wed, etc. Then there is the where we lived time: first year of marriage (3 installations), then Nevada (ISAFAF), Panama (Howard AFB) and so on. Smaller segments and daily time measurements can revolve around something good to eat! I do love a good snack. And since loosing a lot of weight, I recognize the importance of eating less… but more often. So, for Dale and I, the 10:00 snack and the 2:00 snack are gems of the day! We love fruit! It is the season for fresh items. Today we…

Beth’s Garden is Pumping Out Rhubarb
We all have favorite ladies in our lives. I have one who is right up there at the top, Beth Kocsis. She not only gave me the world’s best son-in-law, but supplies rhubarb too. Does life get any better? I don’t think so.So, with a fresh supply of rhubarb comes my Mom’s fantastic recipe for Rhubarb Delight. My daughter and I have been guilty of picking some of the rhubarb off of the top of a very hot dessert that came straight out of the oven. When asked why we did this… blank stares came across our faces… as if… how could we refrain. This is a “TRY it, you’ll…

35 years ago today I entered the world. I made a “Husband & Wife” a “Mom & Dad”. The Lieutenant and Mrs lived on the edge of Death Valley aka Indian Springs Auxiliary Field… now referred to as Creech AFB. As I understand it (since I hardly remember) it was quite the drive but I was born at Nellis AFB, just outside of Las Vegas, the closest hospital. 35 years later, many many moves and two special-deliveries of my own I can sit here amazed at where my life has taken me. So with a little reflection and without further adieu… 35 ‘Deep Thoughts’ to celebrate my 35 years Get…

New Year Fitness Goals
We all made it through the holidays and I believe the average weight gain for Americans is 5 pounds. Of course, all of us have started our new efforts or renewed efforts to lose weight or maybe the plan has already been abandoned? It’s real hard to keep up a workout or weight loss goals without a plan and changes to your lifestyle. The biggest change ever for me was planning as a couple. We found a way to change the way we thought about food, exercise and lifestyle. We now exercise together at least three times a week and many of our spring through fall activities are outdoor in…
