Camp Grandpa! It is July on our calendar and fireworks are getting to explode in my heart as the grands are getting ready to arrive. Activities are on Grandpa’s plate. Their hunger for adventure, outdoors, hammering, mud and total movement are insatiable. Therefore, Grandma is getting ready to find some ‘fuels’ that are kid appropriate: lunches and dinners. There is something about chicken nuggets that make my children’s mouth water, whether the frozen variety cooked in the toaster oven or the kind fresh out of the deep-fat fryer at our favorite fast food restaurant. We went to the pumpkin patch with 2 of the grands today. Fun. Each ran and found their beauty. We just returned from a road trip of over 3,200 miles and it reminded us of a PCS except at the end I did not start a new job, there were not three kids in the backseat, the house was still there and we knew the way around our neighborhood! Dinner was not progressing as it should have last night. My mind was going 7 places at once and the hunger bar was rising higher than the oven was baking. Palisades Park Eggplant Lasagna
The gardens are chugging out produce. I can see it like a cartoon event. Boing another plant flops out a beauty. Boing there’s another variety. Fresh Spinach Dip
I mentioned the other day that I had a boat load of spinach that we harvested… all at once. Besides frying it, putting it in salads and the yummy Spinach Squares I found a wonderful dip. We sat outside on the deck, in the evening and celebrated the produce with a bowl of bagel chips and Fresh Spinach Dip. I highly recommend it!I love to put the spinach in the freezer for about an hour, then take it out and crunch it down. Amazing how it breaks and is so brittle. This is an all time favorite. It was the dish that I was asked to bring to so many occasions that it almost became known as Deb’s Dip! This cooks up in no time and has little preparations needs. You have to love that!
