    A Light at the End of the Tunnel

    THIS is a picture of peace – because you can’t have peace without turmoil. And we had turmoil. (Read “The Rubberband Effect“) Last night I put my strong-willed, “I will ONLY sleep in your arms”, Baby Boy in bed an hour earlier than usual. I turned on his CD player. I kissed his sweet little head and I whispered good-night. For three-minutes he let us know that HE WAS NOT HAPPY! but then… there was silence. Sweet silence. Sweet peace.     Cioppino is the quintessence of seafood dish. I love tartness, tang and even taste buds on fire. And, I love using the beautiful soup tureens that I picked up over the years.     Here is a meal that you can pull off of your shelves if need be. The light sauce is a welcome change from heavy pasta sauces. This recipe serves 6 and cooks up in 15 minutes. Busy schedule? Running late day?     Another Lenten Friday special meal here. This creamy dish, served with a salad and fresh french bread is a winner. The Gruyere cheese is nutty and adds a new flavor. If you don’t have Gruyere, Swiss cheese is a good substitute. 1 lb scallops1 T chopped onion4 mushrooms, slicked thin3 T butter3 T. flour1/8 t cayenne pepper1/2 c milk2 T grated Parmesan cheese1 T snipped parsley1/2 c shredded Gruyere cheese1/2 c finely crushed round crackers1 T butter, melted Thaw scallops if frozen.     One of the best times of the year to catch a fish fry is now during Lent. Even as you take a drive through sleepy towns, look at the signs posted. I would bet that you will see a local group putting on a fish fry. My advise is to get there early, as they sell out before the line is finished.I prefer to eat fried fish out.. because when we do it at home, the aroma stays around longer than our hunger… and candles, incense and open doors are the norm when trying to get over the meal.Here is a different type of fish fry.     To everything there is a season, and with Lent here, fish – well seasoned is a celebration unto it’s self.While living in Florida we had what we thought was an unending supply of red snapper available to us. This white fish was easy to adapt to all favorite recipes. It broiled, grilled and baked to perfection.     I’m a guest writer on this amazing blog. I am excited to be a part of it! I gave up make up for lent. For some of the natural beauties in the world (or men), this would not be a big deal.
