Tasty Tuesday: Healthy & Yummy Chicken Nuggets
There is something about chicken nuggets that make my children’s mouth water, whether the frozen variety cooked in the toaster oven or the kind fresh out of the deep-fat fryer at our favorite fast food restaurant. Are they on the list of healthy-meals at the Kocsis household though? Not so much.However, earlier this week I made a delicious breaded and baked chicken nugget that knocked my boys’ socks right off! A crowd fills the house at Thanksgiving each year. Chairs are mixed and matched to heights of a child’s lap. Tables are added domino style… fitting this end, turning a corner with several tablecloths draped over them. My table is a center point of the Thanksgiving action for me. For me. Now, for more than half of us it is the Macy’s Day parade which spills into football. Hors d’oeuvres fill the gap from the yeasty breakfast rolls or bowls holding fruited steamy oatmeal to dinner. Valentine’s Day. I know some call it the “Hallmark Holiday” but I’m the romantic type [much to my hubs chagrin ;)] and don’t see it that way at all. I find joy in celebrating being a couple. Because there are some days, some hours, some moments when it is just. not. easy. So making a big to-do about Love… I think its necessary. I think it is a great reminder what it is supposed to be. Preparations are under way… The tree has either been hauled out of the closet/basement/attic; or a new one has been purchase and is sitting in a bucket of water ready to handle the 15 tons of ornaments that your family has progressively added to each year. Creamy Pepper Pot Soup – Tasty Tuesday
Magic ingredients can turn a overflow of peppers into a tasty filling lunch that can be cooked up from scratch in 30 minutes. The magic isn’t quite Disney, or David Copperfield, but still transforming from counter top or refrigerator extras to steamy bowl full of goodness! And, this soup is for two, not twenty! Substitutions are allowed and encouraged when making your very own homemade from scratch: as you know where the senses are! Should you have the urge for some extra heat, use hotter peppers. Tasty Tuesday: Shrimp Scampi Improvised
My boys have a favorite meal; Shrimp Scampi! Only trouble is Hubs HATES shrimp. SO we don’t do the shrimp ‘thing’ when he is home. However, he was in the field the past two weeks and so when I was meal planning it was easy enough to add the favorite meal to the menu! The morning of the planned-meal came along and I made sure we had a bag of shrimp in the freezer … However, what I did NOT account for was the fact that we had opened the bag before and there were about 15 shrimp left.
