Breakfast White Rice Buttermilk Waffles
Here is a hearty and tender waffle recipe that is just a bit different. It is also a use for some leftover white rice from the night before! White Rice Buttermilk Waffles3 large eggs, separated2 c. buttermilk6 T. melted shortening2 c .flour1/2 t. salt1 T. baking powder1 T. sugar or Splenda1/2 t. baking soda1 c. cooked whole grain rice Beat egg whites until they form soft peaks, set aside. Beat egg yolks until lemon colored. Add buttermilk and shortening.Combine flour, salt, baking powder, sugar and baking soda. Add this to the egg yolk mixture. Stir until blended. The frost is coming. The temperatures are creeping down each night, going a degree lower and getting within striking distance of the first freeze. The frost will soon be on the pumpkins. Yes Autumn is here. As the garden patch is reduced to empty rows… the bell pepper plants still are heavy with beautiful colors of a fall palate. Our tomatoes are long gone, but the local orchard is still selling them by the 1/2 bushel.
