Finding the Best in a Situation
Valentine’s Day. I know some call it the “Hallmark Holiday” but I’m the romantic type [much to my hubs chagrin ;)] and don’t see it that way at all. I find joy in celebrating being a couple. Because there are some days, some hours, some moments when it is just. not. easy. So making a big to-do about Love… I think its necessary. I think it is a great reminder what it is supposed to be. I think it’s too easy to take advantage (not on purpose!) of your spouse in the hustle and bustle of our crazy days. Taking a day to really say “I Love You” is needed.…

Tasty Tuesday: Shrimp Scampi Improvised
My boys have a favorite meal; Shrimp Scampi! Only trouble is Hubs HATES shrimp. SO we don’t do the shrimp ‘thing’ when he is home. However, he was in the field the past two weeks and so when I was meal planning it was easy enough to add the favorite meal to the menu! The morning of the planned-meal came along and I made sure we had a bag of shrimp in the freezer … However, what I did NOT account for was the fact that we had opened the bag before and there were about 15 shrimp left. (15 divided by 3 … not nearly enough for my boys.)…

Cioppino: A #1 Seafood Soup
Cioppino is the quintessence of seafood dish. I love tartness, tang and even taste buds on fire. And, I love using the beautiful soup tureens that I picked up over the years. I love a good shrimp dish. I love cheese. Voila Vieux Carre Scampi marries the two, and we get to celebrate. This is a dish from the French Quarter in New Orleans.
