Tasty Tuesday: Homemade Gnocchi
I have a few loves in life. One of them is good gnocchi. It is one of my favorite pastas and I never pass up the opportunity to try a new dish of it, usually at a restaurant. Recently I stepped out of my comfort zone and tried successfully to make it myself. I can’t find a gnocchi that I just /love/ from a grocery store and now I no longer need to look. Wow is this easy! I believe that traditional gnocchi is made from potatoes and this is made with cheese, maybe that’s why I fell in love with this recipe. Another note, my husband /hates/ Ricotta Cheese so I…

Layered Broccoli Salad
There is something so refreshing and delicious about food that is in season. My peas are bursting off the vines, there is proliferent amounts of broccoli in gardens around the midwest and isn’t bacon always in season? I’m thinking, “Yes!” Broccoli Salad is a must have this time of year. Before we get started I have to share my new favorite thing to wear … skirts! I had /no idea/ they could be so comfortable and cool (literally) until recently. Admitedly I can’t just dive into garden work when I’ve donned my favorite comfortable knit skirt but I sure can enjoy a bottle glass of wine (or my favorite broccoli salad!) with…

Tasty Tuesday: Steak Marinade
There is something extra delicious about a steak fresh off of the grill. If that steak has been marinated for a couple of hours in a favorite dressing, mouths begin to water with the sounds of the steak sizzling on the grill. Mustard Beef Marinade 1/3 c of Olive Oil1/2 c of soy sauce2 T of lemon juice1 T of Worcestershire Sauce (a small tangent – I love that word! Every time I say it I have to let it roll off my tongue thinking about a succulent piece of steak melting in my mouth.)1/2 T of mustard powder from your spice rack or 1 T of mustard from your frig1 garlic clove, pressed Mix all ingredients in a…

Tasty Tuesday: Healthy & Yummy Chicken Nuggets
There is something about chicken nuggets that make my children’s mouth water, whether the frozen variety cooked in the toaster oven or the kind fresh out of the deep-fat fryer at our favorite fast food restaurant. Are they on the list of healthy-meals at the Kocsis household though? Not so much. However, earlier this week I made a delicious breaded and baked chicken nugget that knocked my boys’ socks right off! I know it is a good meal when there are no leftovers, when they ask for more and I have to say “Sorry, they are all gone.”, when I think ‘We are definitely doing these again’! Healthy & Yummy Chicken NuggetsINGREDIENTS:3-4 thick slices bread1/2…

Tasty Tuesday: Asparagus & Bacon Bundles
There are some foods I love. Bacon happens to be at the top of the list. Bacon makes /anything/ taste better I’m pretty convinced. (Ice cream, also at the top of that favorite list, might be the exception while I think about it.) Another favorite … crispy, fresh asparagus. I LOVE asparagus but I’m picky about it. I don’t like cold asparagus it has to be fresh off the grill, the range or the broiler. I don’t like limp asparagus either. None of the frozen, boiled stuff for me, like Mom always served at Thanksgiving, ergo I was quite convinced till recently that I hated it. Now that fresh asparagus is…

Tasty Tuesday: Slow Cooker Goulash – Make Ahead
I love Pinterest. Especially when I find something that looks doable and then I do it! I’ve been able to mark a few things completed. I cleaned out my sink-drains with baking soda and vinegar. We have turned an old dresser into storage shelves in our basement. Most recently I made Freezer-Ready Crock Pot Goulash, a great recipe for my family and also to give as a gift to a family with a new baby. This is a super easy recipe for goulash and I made three two-gallon freezer bags of it, each with 5 cups of prepared, but not cooked, goulash in it. I put it together this afternoon and then can cook it in…
