    Feeling the Need for Health Food? Feed Me Fish!

    I have had a heaping helping of holiday food. LOVE it. Did I have my fill… NO. But, sanity has returned, and some delicious seafood calls.There are so many different types of fish that we have had in so many different parts of the world… that I cannot name my favorite, or think of a certain recipe without thinking of the folks with whom we dined, or the restaurant where we looked out windows and saw vistas that were as beautiful as the dish that was served.Therefore, I will be writing a few recipes here.     Spicy and zippy dishes welcome the weekend! I am still thinking about having fish tonight and going through some of my multiple starred recipes. This Creole Fillet recipe came from a 56th ARS Squadron collection of recipes. We were in Iceland where Ysa, or cod was fresh and abundant.     Our Pepper Plants are A’Popping: Ready for Nacho Topping

    No luck this year with green beans… at least not since early July when we got our first harvest. Then the bugs, or elements or something came in and wiped them out. Ugh. Little luck with tomatoes. We have walnut trees, so I know the tomatoes have to fight for survival. Other rows of plants have flourished… and I love it.     I was in our local grocery store last week and eyed the tomatoes, corn and other fresh items that were on sale. Soon it will be our local products sitting in the bins.     Cioppino: A #1 Seafood Soup

    Cioppino is the quintessence of seafood dish. I love tartness, tang and even taste buds on fire. And, I love using the beautiful soup tureens that I picked up over the years.     Spring is in the Air

    What is the bright orange-orb in the eastern skies this morning? Does it for tell a spring-like day ahead of us? My bones begin to warm at even the thought of winter turning to spring. I sent my kindergartner to school today just *knowing* he will have outdoor recess. (They stick to indoor recess in the gym when the weather is below freezing.)     Dale came back in the kitchen: armed with creativity and focused on a delicious dinner. In our freezer was one lone Ziplock freezer bag with 2 cups of turkey breast. A mission in the making… I knew he was clicking off the requirements for this job. I handled the landing strip… aka our coffee table turned into a festive dinner site.
