Feeling the Need for Health Food? Feed Me Fish!
I have had a heaping helping of holiday food. LOVE it. Did I have my fill… NO. But, sanity has returned, and some delicious seafood calls. There are so many different types of fish that we have had in so many different parts of the world… that I cannot name my favorite, or think of a certain recipe without thinking of the folks with whom we dined, or the restaurant where we looked out windows and saw vistas that were as beautiful as the dish that was served. Therefore, I will be writing a few recipes here. Cannot pick a favorite! But will start with simple.(Remember when you buy your fish that…

Fridays are just Fine for Fish
Spicy and zippy dishes welcome the weekend! I am still thinking about having fish tonight and going through some of my multiple starred recipes. This Creole Fillet recipe came from a 56th ARS Squadron collection of recipes. We were in Iceland where Ysa, or cod was fresh and abundant. Soup Liquid Warmth at Your Fingertips
It is Tuesday. It is snowing. It is dark gray and cold. Company is coming for lunch. Our driveway is a bear to climb and make the turns. So, a warming, aromatic entry will calm the nerves of those who came fishtailing at idiot speeds up the drive. I know my friends!Today there is a pot of soup simmering on the stove. As I have said before, dishes are my passion… so the opportunity to use some deep red pottery bowls is a bonus! With a basket of sliced bagels the vegetable soup is going to be great!Vegetable Soupserves 3 (8 oz servings)Olive oil1/2 medium onion2 mushrooms chopped2 T chopped…

Turkey in a Puff LeftoversTurkey Celebrated!
We always have a large crowd over for the holidays. Name the holiday – we love to entertain. When it is appropriate to have a spread with a turkey dinner… we roast a big bird… a mighty big bird! Because that means there will be enough gravy several nights of turkey leftovers. I love it. Dale loves it. We are happy people at this time of year!Turkey in a puff started out to be ham in a puff. Ham is not a family favorite, so I looked for a way to dress it up, even disguise it a bit. But to my non-ham loving children: ham is ham and the…

Our Pepper Plants are A’Popping: Ready for Nacho Topping
No luck this year with green beans… at least not since early July when we got our first harvest. Then the bugs, or elements or something came in and wiped them out. Ugh. Little luck with tomatoes. We have walnut trees, so I know the tomatoes have to fight for survival. Other rows of plants have flourished… and I love it. Ball jars or Mason jars will never go out of business as long as I am in control of the pressure cooker. That big old pot goes nonstop during this time of the year. But what to do with peppers. Can’t can them; chopping and freezing work well.. but…

Hot Topic: What’s in your Garden? Lots of Green &Red! Baked Beets with Feta and Pesto
Folks want to know “What is growing in your garden?” If it was just up to the garden, and not the gardener… the answer would be weeds, weeds, weeds. However, with a quick check of my nail cuticles… you know that at our house it is a daily stretch out there, and the weeds get ‘bucketed’. I do not know a better looking vista, than a neatly planted, well maintained vegetable garden. And hooray, this year we have a frameable picture. Two new rows of lettuce are just popping out. 3 early plantings are so tall… that if I don’t use them quickly (and giving them to friends is tone…

In the mood for some Mexican Food?
I was in our local grocery store last week and eyed the tomatoes, corn and other fresh items that were on sale. Soon it will be our local products sitting in the bins. (Small store, with lots of local flavor!) I don’t know, but the picture I took in of the vegetables just put me in the mood for some good Mexican food. Right there, sorting through the red peppers was a good friend with a recipe card in her hand. She volunteered to share it with me… and said it was good to pass it on. I love getting tried and true recipes. This one is great, give it…

Cioppino: A #1 Seafood Soup
Cioppino is the quintessence of seafood dish. I love tartness, tang and even taste buds on fire. And, I love using the beautiful soup tureens that I picked up over the years. Great food in a beautiful dish… does it get better? I still do not know how to pronounce this… I usually point at it on the menu. It is always a wonderful choice, and always a bit different. I have asked for the recipe at several restaurants, and their response has been great; however, the recipes have been for about 45 folk… Not my usual family gathering! This recipe, which serves 6, came from a neighbor who swears…

Spring is in the Air
What is the bright orange-orb in the eastern skies this morning? Does it for tell a spring-like day ahead of us? My bones begin to warm at even the thought of winter turning to spring. I sent my kindergartner to school today just *knowing* he will have outdoor recess. (They stick to indoor recess in the gym when the weather is below freezing.) I love to imagine the sights and sounds of the playground around noon today. I’m sure it will sound quite heavenly as they run out the door straight to the playground soaking up the ‘warmer’ weather. My preschooler and I will get out today and sweep off…

Rigatoni Turkey Dish
Dale came back in the kitchen: armed with creativity and focused on a delicious dinner. In our freezer was one lone Ziplock freezer bag with 2 cups of turkey breast. A mission in the making… I knew he was clicking off the requirements for this job. I handled the landing strip… aka our coffee table turned into a festive dinner site. He called all the ingredients into order, moved them into positions and assembled a meal worthy of five stars once again! Good work Sir! You demand the best and your creativity exemplify that!
